BANANA FRITTERS 
1 egg
1/4 - 1/2 c. milk
1/2 tsp. salt
1 c. flour, sifted
2 tbsp. sugar
1 tsp. baking powder
4 large bananas, cut in 1 inch chunks
Oil for frying

Beat egg and stir in milk. Add sifted dry ingredients. Add bananas. In a deep skillet or deep pan, heat oil until hot but not smoking. Drop large tablespoons of the mixture into hot fat. Cook until a fork comes out clean when tested and fritters are golden brown.
