LENTIL SOUP 
1 link of sausage (1 lb. German smoked or Kielbasa)
1 c. lentils
6 c. water
1 lg. onion, finely chopped
2 bay leaves
1/4 tsp. pepper
1 tsp. salt
1 stalk celery, diced (add leaves, to be removed later)
1 lg. carrot, sliced in 1/4 inch thick rounds

Wash and sort lentils thoroughly. Cut sausage in 1/4 inch thick circles. In a 2 1/2 quart saucepan, bring water to boil and add all ingredients but the carrots. Simmer for 40 minutes. Add the carrots and cook 10 more minutes. Test to see if lentils are done. If so, remove bay leaves and celery leaves. Serve or refrigerate until needed.
