NORTH CAROLINA RIBS 
Serves 6.

MARINADE:

1 tbsp. salt
1 tbsp. coarsely ground black pepper
2 tsp. crushed red pepper flakes

6 lbs. spareribs

SAUCE:

1 c. cider vinegar
8 tbsp. (1 stick) unsalted butter
4 tbsp. brown sugar
2 tsp. crushed red pepper flakes

Combine the marinade ingredients and rub all over the ribs. Marinate for at least 1 hour. Combine the sauce ingredients; bring to a boil and simmer for 5 minutes. Use the sauce warm for basting the ribs and hot for a dipping sauce.
