LENTIL SOUP 
1 1/4 c. lentils, soaked overnight
2 qts. beef broth
6 frankfurters, cut into 1/2" slices
2 sliced onions
2 sliced carrots
2 stalks sliced celery
1 tbsp. dried parsley
2 tsp. salt
1/4 tsp. pepper

Combine all ingredients. Bring to a boil, cover, simmer 35 minutes or until lentils are tender. 8 servings.
