ITALIAN COOKIES 
4 eggs
2 tsp. vanilla or almond extract
Pinch of salt
1 c. brown sugar
1 c. sugar
1 c. chopped nuts
1/2 c. butter
1 tbsp. shortening
2 c. flour
1 tbsp. anise seeds
1 tbsp. cinnamon
1 tbsp. lemon or orange peel, chopped

Mix all together. On a floured board, shape into an oblong roll; flatten. Bake at 400 degrees approximately 20 minutes or until light brown. Cool before cutting. Cut diagonally into 1 inch wide slices.
