HUMMINGBIRD CAKE 
3 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 c. sugar
1 1/2 c. butter-flavored oil
3 eggs
1 (8 oz.) crushed pineapple
2 med. bananas
1 c. chopped nuts

ICING:

8 oz. cream cheese, softened
4 tbsp. butter
1 lb. powdered sugar
1 tsp. vanilla
1/2 c. flaked coconut
Nuts, if desired

Preheat oven to 350 degrees. Grease and flour tube pan. Sift flour, soda, salt, cinnamon and sugar into the oil, eggs and pineapple, undrained. Mix by hand only. Stir in bananas and nuts and mix again. Pour into tube pan. Bake at 350 degrees 1 hour and 5 minutes or until tests done. Cool 1 hour before removing from pan. Cool before icing.

ICING: Blend ingredients well. Sprinkle with nuts, if desired.
