ZUCCHINI PRESERVES 
6 c. zucchini, peeled and grated
5 c. sugar
2 tsp. lemon juice
1 (20 oz.) can crushed pineapple
2 pkgs. Jello - any flavor

Add water to drained pineapple juice to measure 1 cup. Add juice to zucchini. Boil 6 minutes. Add sugar, lemon juice and pineapple. Boil 6 minutes. Add dry Jello. Boil 6 minutes. Spoon into jars and seal.
