ORANGE ROUGHY ALMONDINE 
1 tbsp. safflower/sunflower butter
1 tbsp. slivered almonds, toasted lightly
2 (3 1/2 oz.) orange roughy fillets
2 tbsp. lemon juice
Paprika

Melt butter in microwave in a square baking dish. Roll fish in butter, squeeze lemon juice over fish and sprinkle with paprika. Cover dish with wax paper and microwave for 4 minutes on high. Check for flakiness and microwave 1 minute longer if necessary. Remove to serving platter. Garnish with toasted almonds.
