CARROT - ZUCCHINI BARS 
1 1/2 c. flour
3/4 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. ginger
1/4 tsp. baking soda
2 eggs, slightly beaten
1 1/2 c. shredded carrots
1 med. zucchini (1 c.), shredded
1/2 c. raisins (optional)
1/2 c. nuts, chopped
1/2 c. oil
1/4 c. honey
1 tsp. vanilla

Mix flour in large bowl with brown sugar, baking powder, ginger, and baking soda. In another bowl, stir together eggs, carrot, zucchini, walnuts, oil, honey, and vanilla. Add moist mixture to flour mixture. Stir only to combine. Spread batter in an ungreased 13 x 9 x 2 inch pan. Bake in a 350 degree oven for 25 minutes. Cool.

Citrus Cream Cheese Frosting: Beat 1 (8 ounce) tub of light cream cheese, 1/2 cup powdered sugar, 2 tablespoons orange juice, and 1 tablespoon shredded lemon or orange peel until light and fluffy.
