MEXICAN OMELET 
4 eggs
1 tbsp. milk
1 tbsp. finely chopped onions
1 tbsp. finely chopped green pepper
1 med. size tomato
Salt & dash of pepper
butter

Peel and dice tomato. Beat eggs and milk. Add tomato, green pepper, onion, salt and pepper. Cook in butter in a medium hot skillet. Serve hot.
