PINEAPPLE - LEMON CREME 
1/2 c. sugar
2/3 c. water
2 eggs, separated
1 tsp. grated lemon peel
1/4 c. sugar
3 tbsp. cornstarch
1 can crushed pineapple with juice
1 pkg. cream cheese
2 tbsp. lemon juice

Combine sugar, cornstarch, pineapple and water. Microwave uncovered 4-5 minutes or until mixture boils, stirring once or twice during last half of cooking time. Stir in lemon peel juice and beaten egg yolks. Add cream cheese. Microwave uncovered 1 minute. Beat to blend in cream cheese. Cool.

Beat egg whites until frothy. Gradually beat in 1/4 cup sugar until soft peaks form. Add to cooked pudding, fold in just until combined. Spoon into dessert dishes. Refrigerate until served.

Since microwave ovens vary in power, you may need to adjust your cooking time.
