PINEAPPLE - LEMON CREME | |
1/2 c. sugar 2/3 c. water 2 eggs, separated 1 tsp. grated lemon peel 1/4 c. sugar 3 tbsp. cornstarch 1 can crushed pineapple with juice 1 pkg. cream cheese 2 tbsp. lemon juice Combine sugar, cornstarch, pineapple and water. Microwave uncovered 4-5 minutes or until mixture boils, stirring once or twice during last half of cooking time. Stir in lemon peel juice and beaten egg yolks. Add cream cheese. Microwave uncovered 1 minute. Beat to blend in cream cheese. Cool. Beat egg whites until frothy. Gradually beat in 1/4 cup sugar until soft peaks form. Add to cooked pudding, fold in just until combined. Spoon into dessert dishes. Refrigerate until served. |
