ORANGE SOUR CREAM MUFFINS | |
6 tbsp. butter, softened 1 c. sugar 1 egg 1/2 c. sour cream 2 tbsp. + 2 tsp. orange juice 2 tbsp. grated orange rind 1/2 tsp. orange extract 1 1/4 c. flour 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped pecans Cream butter and sugar. Beat in egg. Fold in sour cream, orange juice, rind and extract. Sift dry ingredients; add to orange mixture, blending well. Stir in pecans. Fill greased muffin pans 1/2 to 3/4 full. Bake at 375 degrees for about 12 minutes. Makes 16 to 18 muffins. |
