ZITI WITH SAUCE 
1 lb. small ziti, salt to taste
2 tbsp. olive oil
1 clove garlic, mashed
3 - 4 zucchini, cut into 2 inch long strips, half as wide as noodles
1 c. chopped walnuts
1 c. low - fat cottage cheese
1/4 tsp. red pepper flakes (optional)
Salt and pepper to taste
1 lg. ripe tomato, seeded and cut
1/2 c. Parmesan cheese

Bring to a boil 4 to 5 quarts water. Add salt and ziti and stir well. Boil until cooked to al dente stage. Drain and keep warm. Heat large skillet and add olive oil. When it is warm., add garlic and saute briefly. Add zucchini, stir to coat with oil and saute until zucchini have lost their rawness but are still firm. Add walnuts and saute 1 minute, then add cottage cheese, pepper flakes, salt and pepper. Cook and stir only to warm cottage cheese, then add tomato. When tomato cubes are warm, remove skillet from heat and mix ziti and Parmesan cheese.
