NORAH CAREY'S IRISH SODA BREAD | |
1 1/2 c. buttermilk or sour milk (recipe follows) 1 tsp. baking soda 1/2 c. sugar 4 oz. (1 stick) butter 1 lg. egg 4 c. flour 1 tsp. salt 1 tsp. baking powder 1 c. raisins Add baking powder to buttermilk and egg. Mix all dry ingredients together by hand. Make a well in the center, pour in buttermilk, egg and soda mixture gathering in dry ingredients. Knead carefully and lightly, and shape into round form. Turn onto floured pan or tin. Bake for 1 hour. Knock on top to make hollow sound to make sure it is done. Bake at 350 degrees. SOUR MILK: Combine 1 cup milk with 1 tablespoon lemon juice or 1 tablespoon vinegar. |
