CHICKEN BREASTS SUPREME | |
6 chicken breast, skinned 1/2 tsp. salt 1/8 tsp. pepper 1/4 tsp. paprika 3 tbsp. butter 1 (3 oz.) can mushrooms 2 c. hot chicken broth 3 tbsp. all purpose flour 4 tbsp. sherry (optional) 1 (14 oz.) can artichoke hearts, drained and rinsed OR 1 pkg. of frozen broccoli Sprinkle breasts with salt, pepper and paprika and saute in butter over medium heat in heavy skillet. Remove when lightly golden on both sides. Add hot chicken broth and stir in flour. Add sherry if desired. Place chicken breasts and artichoke hearts or frozen broccoli in a buttered baking dish and cover with mushroom mixture. Bake in preheated oven 375 degrees 40 minutes. 6 servings. |
