APRICOT ALMOND BREAD 
1 1/2 c. dried apricots
1 1/2 c. water
2 tbsp. butter
1/2 c. honey
1 tsp. salt
2 1/2 c. flour (white or white - whole wheat mixture)
1 tsp. baking soda
2 tsp. baking powder
1 c. chopped almonds
1 beaten egg
1 tsp. vanilla
1/2 tsp. grated orange rind

Cook apricots in water 10 minutes, covered over low heat. Cool completely. Add butter, honey and salt. Beat in egg and vanilla. Sift dry ingredients together. Fold everything together. Spread into greased pan. Bake 1 hour 15 minutes at 350 degrees. Remove from pan after 10 minutes.
