CHICKEN TIMBALES 
2 c. milk
1 c. soft bread crumbs
1 tsp. salt
1 tsp. grated onion
3 eggs
2 c. chopped chicken

SAUCE:

2 tbsp. butter
2 tbsp. flour
1 c. chicken broth
Salt to taste
1/2 c. cream

Pour milk over crumbs and allow to soften. Add seasonings, eggs and chicken. Spoon into 6 buttered custard cups. Set in shallow pan of hot water. Bake at 350 degrees for 30 minutes. Unmold and serve with sauce.

To make sauce, melt butter, add flour and blend. Add broth, cook until smooth and thickened, stirring constantly. Season with salt and slowly stir in cream.
