BLUEBERRY JAM | |
3 3/4 c. crushed blueberries 1/4 c. lemon juice 1/2 tbsp. grated lemon rind 8 c. sugar 1 c. pectin Pick over and wash berries. Crush well and add lemon juice and rind. Add sugar and heat until boiling, stirring constantly. Boil rapidly for one minute. Remove from heat and stir in pectin, skim and pour into clean hot jars or glasses. Seal with paraffin at once. Makes about 11 (8 oz.) jars. |
