KEY LIME PIE 
Key limes, introduced to the Florida Keys in 1838 from Mexico, are a distinctively sweet variety with a thin skin and a greenish yellow flesh.

To make one 8 inch pie: 1/4 c. key lime juice 4 eggs, the yolks separated from the whites 14 oz. sweetened condensed milk 1/4 c. sugar

Beat the egg yolks. Add the condensed milk and mix well. Slowly add the lime juice and beat until the filling mixture resembles custard. Pour the filling into the pie shell. Bake in a preheated 350 degree oven for 10-15 minutes, or until the filling is firm. Allow to cool.
