CHICKEN BROCCOLI STROGANOFF 
2 c. frozen cut broccoli, cooked and drained
1 tbsp. butter
1/4 c. chopped onion
3 tbsp. flour
1 (10 3/4 oz.) can condensed chicken broth
2 cups cubed, cooked chicken
1 (2.5 oz.) jar sliced mushrooms, drained
1 (8 oz.) carton sour cream
Hot cooked noodles
Chopped fresh parsley

Place butter in a 2 quart casserole and microwave on high 20 seconds or until melted. Add onion; toss to coat. Cover with plastic wrap and microwave on high 2 minutes or until crisp tender. Add flour blend well. Using wire whisk, stir chicken broth into onion mixture; blend well. Stirring midway through cooking, microwave on high 4 to 6 minutes or until mixture thickens and bubbles.

Add chicken, broccoli, mushrooms and sour cream, blend well. Stirring midway through cooking, microwave on high 3 to 5 minutes, or until mixture is thoroughly heated and bubbles around edges. Serve over hot, cooked noodles; garnish with parsley. Makes 6 servings.

NOTE: Turkey or ham can be substituted for chicken.

Since microwave ovens vary in power, you may need to adjust your cooking time.
