AUNT GRACE'S LIME JELLO 
This has been a family favorite for years. I always make a double batch and it never lasts long at a family gathering. Special thanks to my Great Aunt Grace for passing this recipe down to my Grandmother and to my Grandmother for passing it down to me. I never met my Great Aunt but the woman made some amazing jello. :)

1 large (5.6 oz.) pkg. lime jello (or any flavor of your choosing)
1 bag mini marshmallows
1 (8 oz.) pkg. cream cheese
1 cup crushed pineapple
1/2 cup pineapple juice (draining the can of crushed pineapple works well for this)
1 pint heavy whipping cream

Prepare lime jello according to package directions and pour into a bowl. Immediately add entire bag of mini marshmallows and pineapple juice. Stir until marshmallows dissolve. Set aside.

In another bowl mix cream cheese, crushed pineapple and whipping cream with electric mixer on high until soft peaks form. Add cream cheese mixture to jello mixture and using electric mixer blend very, very well. Not doing so will cause the mixtures to separate and ruin the jello. Allow to set for at least four hours. Enjoy!
