MOLDED CUCUMBER SPREAD 
1 env. unflavored gelatin
Water
1 1/2 c. mayonnaise
2 c. cucumbers, peeled, seeded and cut
2 stalks celery, washed and cut
1/2 c. onion
1 sm. green pepper, seeded and quartered
1 tsp. salt

In advance, mix gelatin in a 1 1/2 quart mixing bowl with 1/4 cup boiling water. Stir until well dissolved. Add mayonnaise, salt and 1/4 cup cold water. Mix well.

Put all vegetables in blender and pulverize. Combine with mayonnaise mixture and chill to jell.

Serve with snack crackers or pretzels, or just as a salad. If desired, pour into a slightly oiled mold and serve as a Jello mold.
