LEMON FROSTED SALAD 
2 (3 oz.) pkg. lemon Jello
2 c. boiling water
2 c. 7-Up
1 (20 oz.) can crushed pineapple
2 sliced bananas
1 c. miniature marshmallows; optional

Mix Jello with water and 7-Up. When it starts to thicken, add the fruit and marshmallows. Refrigerate until firm. Spread with frosting and top with grated cheese if desired. Chill and serve.

FROSTING:

1/2 c. sugar
2 tbsp. flour
1 c. pineapple juice
1 egg, beaten
2 tbsp. butter
1 pt. whipping cream, can use Cool Whip
1/2 c grated cheese; optional

In medium saucepan, cook sugar, flour, pineapple juice, eggs, and butter until thick. Cool. Add whipped cream and mix well.
