APPLE PITA 
3 c. flour
3 tbsp. sugar
1 tsp. salt
1/2 lb. butter
6 tbsp. milk
2 egg yolks
3 lbs. apples
5 tbsp. flour
1 c. sugar
1 tsp. cinnamon
Grated lemon rind

Mix flour, sugar, salt and butter as for pie crust. Mix milk and egg yolks. Add to flour mixture to form dough. Chill 1 hour. Peel and chop apples. Mix with flour, sugar, lemon rind and cinnamon. Roll 1/2 dough to fit 9 x 13 inch pan. Top with apple mix. Press down flat. Roll out remaining 1/2 dough. Cut into strips and criss cross over apples. Brush strips with beaten egg white and sprinkle with chopped nuts that have been mixed with a little sugar. Bake 1 hour and 10 minutes at 350 degrees or until brown.
