AUNT PAT'S RHUBARB CAKE 
1/2 c. butter
1 1/2 c. brown sugar
1 egg
1 c. buttermilk or milk
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. rhubarb
1/3 c. sugar & 1 tsp. cinnamon

Beat together butter, brown sugar, egg, milk and vanilla until well blended. Combine flour, soda and salt; stir in. Add rhubarb. Pour into a greased 9 x 13 inch pan. Sprinkle with sugar and cinnamon. Bake at 350 degrees for 45 minutes (325 degrees for glass pan). Serve warm with whip cream.
