SALMON PATTIES 
1 (1 lb.) can salmon, undrained
1 egg, slightly beaten
2 tbsp. grated onion
2 tbsp. flour
2 tbsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper
2 tbsp. chopped parsley
Cracker crumbs
3 tbsp. butter

Combine salmon, egg, onion, flour, lemon juice, salt, pepper, parsley and 1/4 cup crumbs; mix with fork until blended. Shape into 8 patties; flatten slightly. Dip into crumbs. Fry patties in butter until done.
