LEMON & GARLIC BLACK BEANS &
TOMATOES
 
1 (12 oz.) can black beans
1 or 2 fresh tomatoes
1/2 c. fresh lemon juice
1/2 c. fresh parsley
4 to 5 cloves of pressed garlic
2 tbsp. olive oil

Rinse and heat black beans. Add olive oil and bring to a slow simmer. Remove from heat and add all ingredients except the lemon juice. Mix thoroughly and refrigerate for 2 hours. Add lemon juice before serving.
