LEMON COCONUT BARS 
1 1/2 c. unsifted flour
1/2 c. 10X sugar
3/4 c. cold butter
4 eggs
1 1/2 c. sugar
1 tsp. baking powder
1/2 c. realemon juice
3/4 c. coconut

Preheat oven to 350 degrees. In medium bowl, combine flour and 10X sugar, cut in butter until crumbly. Press firmly on bottom of lightly greased 13 x 9 inch pan. Bake 15 minutes. Meanwhile, in large bowl, combine eggs, sugar, baking powder, and lemon juice. Mix well. Pour over baked crust, top evenly with coconut. Bake 20 to 25 minutes or until golden brown. Cool. Cut into bars. Store covered in refrigerator. For lemon bars - omit coconut, add 3 tablespoons flour to egg mixture.
