BEET POTATO SALAD 
3 lg. beets
1 lg. potato
1/2 lb. tofu, cubed
1/2 c. chopped celery
1/2 c. soy mayonnaise

Cube beets and potato. Steam or boil until tender. Drain and combine with tofu and celery. Dress with the mayonnaise. Chill before serving. Serves 4.
