RITZ CRACKER COOKIES 
20 Ritz crackers, crushed
1 c. sugar
3 egg whites
1 c. chopped pecans
1 tsp. vanilla

Mix cracker crumbs and 1/2 cup sugar, and set aside. Beat egg whites until stiff and add 1/2 cup sugar, vanilla and mix. Fold in, set aside. Spoon on cookie sheet and bake at 325 degrees for 10 minutes.
