BARLEY BROCCOLI SALAD 
3 c. water
1/4 tsp. salt
2/3 c. quick barley or 1/2 c. med. barley
1 lg. bunch broccoli, cut into flowerettes, peel and chunk stems
1 c. raisins and 1/2 c. thinly sliced red onion
10 strips bacon, fried crisp and crumbled
1 c. roasted sunflower seeds

DRESSING:

1/4 c. sugar
Heaping 1/3 c. mayonnaise
Heaping 1/3 c. yogurt
2 tbsp. white vinegar

Cook barley 10-12 minutes for the quick or 50 minutes for the medium. Drain, rinse and chill. Combine all ingredients. Prepare dressing. Toss and chill all together.
