1/2 c. shortening
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 egg, beaten
1/2 c. raw apple, grated
1/2 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon

Cream shortening, peanut butter and sugars together. Add egg, vanilla and grated apple. Blend in the flour, soda, salt and cinnamon. Chill until firm. Drop by teaspoonful on cookie sheet. Do not spread. Bake at 375 degrees for 10 to 15 minutes. Makes approximately 35 cookies.
