YUMMY AND EASY FISH FILLETS IN
FOIL
 
1 lb. fish fillets
8 oz. fresh mushrooms, sliced
1 med. onion, sliced
1 green pepper, sliced
6 tbsp. butter, divided
1 clove garlic, minced
2 tbsp. lemon juice
2 tsp. dried dill or dill seeds
Dash of salt

Saute mushrooms, onions and garlic in 4 tablespoons of the butter. Place fillets in a single layer on heavy duty aluminum foil large enough to fold over and seal in all ingredients. Sprinkle fillets with lemon juice, dill and salt. Arrange green pepper on fillets. Top with mushroom mixture. Dot with remaining 2 tablespoons of butter. Fold and seal edges of foil tightly. Bake on cookie sheet in preheated 400 degree oven for 30 to 40 minutes or until fish flakes easily with fork. Serve with fresh, hot, fluffy rice and lemon slices, if desired, plus your favorite green vegetable. Serves 4.
