SOUTHERN TEXAS MACARONI AND
CHEESE

1 (16 oz.) pkg. large elbow macaroni
1 block mild cheddar cheese
butter
3 eggs
1 cup milk (this is measured by how big the pan is)
salt and pepper, to taste

Cook elbow macaroni until done, drain and set aside.

In 9x13 glass dish, begin to layer macaroni on bottom layer, cut cheddar cheese in chunks about 5-inches wide. Layer the cheese on top of noodles. Take a spoon and put as we call in Texas a chunk of butter on each cheese section. Add salt and pepper to each layer. There should be at least 6 on a layer. Continue to layer in the same manner until you reach the top. The top layer will also have chunks of cheese and butter.

Mix 3 eggs with at least 1 cup of milk. beat eggs with milk, and slowly pour onto dish. This should come up to where the top of elbow macaroni is. If you need more milk, just pour in to make it come just below the top.

Bake at 350°F for about 30 minutes. The eggs and milk will make a great consistency within the mixture. This should all be cooked and absorbed in dish.. MARVELOUS -- YOU'RE DONE - EAT WELL..
