AUNTIE-MOMMA'S BLACKBERRY
COBBLER
 
3 c. fresh blackberries
1 c. sugar
1 tsp. lemon juice
2 tbsp. flour
Butter for dotting
1 or 2 eggs, beaten
4 tbsp. sugar
1 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt

Mix berries, sugar, lemon juice, and 2 tablespoons flour. Spread over the bottom of a well greased deep pie dish and dot with butter. Combine beaten eggs, melted butter and sugar. Sift flour and then measure 1 cup. Add baking powder and salt and sift twice again. Stir a little at a time into egg mixture until well blended. Spread over berries. Bake in a preheated 375 degree oven for 30 minutes. Serve warm with light cream. Yield: 6 servings.
