SHRIMP ERNIE 
1 lb. 15/20 count shrimp
Egg wash
Corn flour
Deep fat to fry shrimp

SAUCE:

1 pt. mayonnaise
2 green onions, cut fine
2 tbsp. horseradish
1/4 c. creole mustard
2 tbsp. chopped parsley

In mixing bowl add all ingredients, stir well with wire whip. Let stand at least one hour before serving. Clean shrimp, let fan tail remain on, split and devein. Season yellow corn flour with salt and pepper. Dip shrimp in egg wash and roll in corn flour. Drop in deep fat at 325 degrees and cook about 5 minutes. Serves 5.
