PASTA DISH 
My kids love Mozzarella cheese, so when we put Mozzarella on it, they eat it. So dad got this recipe from a friend at work and he always makes this for us on his day off. So we call it "Dad's Thursday Night Special".

3 or 4 cloves garlic
Olive oil
2 or 3 shakes dry basil
2 or 3 shakes dry oregano
4 or 5 cans Italian style tomatoes, crushed or whole (Sand W Italian style tomatoes)
Ground Lucatelli cheese
Mozzarella cheese, chopped up
1 lb. rigatoni macaroni

Cover bottom of large deep skillet with oil. Lightly brown garlic in oil (don't burn garlic). You may want to remove garlic after browning. Put in tomatoes. Add basil, oregano, salt and pepper (few shakes).

Add handful of lucatelli cheese. Cook over medium heat until boiling. Simmer for 1 hour, stirring occasionally.

Meanwhile, boil water and cook rigatoni according to package (best if not over cooked).

Grate Mozzarella cheese (enough to sprinkle over pasta). Put macaroni in large bowl, pour on tomatoes. Sprinkle individual servings with grated Mozzarella cheese and lucatelli cheese.

Serve with fresh Italian bread and a side of broiled sausage. Make a salad, and serve the red wine.
