ARROZ CON POLLO 
3 lbs. chicken
1 tsp. oregano
4 1/2 tsp. salt
3 c. rice
1/4 c. tomato sauce
1 oz. fat back
2 oz. cooking ham
2 tbsp. vegetable oil
1 tsp. paprika
2 cloves garlic
2 1/2 c. water

Cut the chicken in parts. Heat the oil and mix the garlic, fat back, and cooking ham. Add the chicken parts and stir at medium. Add all ingredients, except the rice. Add the rice and then add the water. Cover for about 40 minutes at medium.
