SOUR BEEF 
4 lb. beef (lower sirloin)
1/2 lb. larding pork
1 onion
1 tbsp. salt
1/2 tsp. pepper
1/4 tsp. allspice

Make incisions with a knife and roll strips of the beef in the spices, cut inch apart a strip and roll the pork in the beef all around. Place in a cool place over it 1 pint of vinegar and 1/2 pint of water. Turn each day for 3 days. Adding the cut onions and 12 whole peppercorns.

On the fourth day, place the meat in a roasting pan with the onions and spices; add 1 tablespoon of sugar; roast 2 1/2 hours in the usual way. This is good served with stewed prunes.
