JOHN'S HOTCAKES
2 c. self-rising flour
1/3 c. sugar
1/4 c. Crisco oil
1 tsp. vanilla flavoring
1 egg
3/4 c. sweet milk

Mix all ingredients well. I use a wire hand beater. Batter will be thick. The thicker the batter, the higher the hotcake will rise.

Just made this recipe, subbing 1/3 cup of butter for the oil, and adding a sprinkle of cinnamon... the mix is impossibly thick, which makes putting it on the pan an absolute nightmare. However, the taste is really good.
i suggest upping the milk, or else you'll never get it out of the bowl.

Excellent, I made them straight by John's receipt. I used a 1/4 cup measuring cup to dip them on the griddle and they came out perfect size. They were the lightest, fluffiest hotcakes I have ever made. Thanks John.
