FROG EYE SALAD | |
1 c. Acine de Pepe (noodles) 3 c. salted water 1 can chunk pineapple (reserve juice) 2 cans mandarin oranges (reserve juice) 1 c. miniature marshmallows 3 eggs 3 tbsp. flour 1 c. sugar 1 (9 oz.) pkg. Cool Whip Boil Acine de Pepe in the 3 cups of salted water until all the water is absorbed. Drain fruit, saving juice. Cook reserved juice, the 3 eggs, flour and sugar until thick. Add fruit, marshmallows and Cool Whip. Refrigerate. After the salad is cool I add more marshmallows. (I use crushed pineapple in place of chunk.) |
