3 DAY WATERMELON PICKLES 
7 lbs. watermelon rind
7 c. sugar
1 pt. white vinegar
2 tbsp. salt
1/2 tsp. oil of cloves
1/2 tsp. oil of cinnamon
1/2 tsp. alum

DO NOT SOAK RIND! Rinse, remove any red pulp and peel off outside skin. Cut into chunks. Cover with hot water, boil until tender, drain for 4 hours. Make syrup with the 6 remaining ingredients, bring to a boil, add rinds. Boil 15 more minutes. Store in GLASS container for 24 hours.

Drain syrup off, heat to a boil, add rind and store in GLASS container for 24 hours. On 3rd day, bring syrup AND rind to a boil, pour this into sterilized jars and seal.

Makes approximately 6 pints.
