GRATED RAW SWEET POTATO PUDDING | |
4 c. sweet potatoes, peeled and grated 1 c. Georgia cane syrup 1/2 c. white sugar 1 c. milk 1/2 c. chopped nuts 1 c. raisins 1/2 tsp. cloves 1 tsp. allspice 1 tsp. cinnamon 1/2 c. butter (1 stick) 3 eggs Melt butter in iron skillet. Mix all ingredients, adding eggs last. Pour into skillet and bake in preheated oven at 350-400 degrees. When crusted around edges and top, turn under. Do this twice during baking. Cooking time about 40 minutes. Serve either warm or after cooling with whipped cream. Serves 8-10. |
