CORNISH HEN 
1 to 2 cornish hens

Preheat oven to 350 degrees. Remove giblets. Season with salt and pepper inside and out. Truss! Place breast side up on rack in shallow roasting pan. Brush with melted butter or rub each hen inside and out generously with butter. Roast uncovered 350 degrees for 1 hour and 15 minutes (if hen is over 1 pound 2 ounces). Roast until tender and brown. Baste with dripping in pan. May increase temperature to 400 degrees during the last 10 minutes. Cut each hen in half; serve with rice dressing.
