CONGEALED CHICKEN SALAD 
1 boiled chicken
1 (#2) can LeSeur peas, drained
1 1/2 pkg. Knox gelatin, unflavored
Celery and onions, optional
Salt and pepper to taste
1 pt. mayonnaise
6 hard boiled eggs
1 1/2 c. chopped nuts, optional
Pickle relish to taste

Dissolve gelatin in a little cold water. Put in 2 cups of chicken broth (boiling). Chop chicken, eggs, celery, and onions; mix with all other ingredients.

Pour mixture into a rectangular dish. Refrigerate until set. Serve in small squares on a bed of lettuce.
