PEPE' AND ANNIE'S CHICKEN AND
VEGETABLES
 
1 1/2-2 lbs. boneless chicken
1 bottle Italian salad dressing
2 med. onions, cut in sm. wedges or sliced
2 med. tomatoes, cut into strips
1 pkg. whole fresh mushrooms
1 clove garlic
Fresh ground black pepper
2-3 tbsp. butter
1 can chicken broth
1 lb. pasta, your choice

Cut up boneless chicken into bite size pieces. Put in a bowl with a bolle of Italian dressing. Marinate overnight or all day. peel and crush garlic. Saute in pan with onions and parsley, butter, etc. Add the chicken and marinade. Cook 10-12 minutes, add the vegetables and chicken broth. Cook over low heat 5-7 minutes or until vegetables are tender and crisp. Serve over al dente pasta of choice.
