OATMEAL ORANGE BREAD - MUFFINS 
2 c. all-purpose flour
3/4 c. sugar
4 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. rolled oats
1 orange rind and sections
2 eggs, beaten
2 tbsp. butter, melted
1 c. water

Stir together flour, sugar, baking powder, soda, salt, and oats; set aside. Mix in 1 tablespoon of additional sugar with grated orange rind and diced sections; set aside.

Combine beaten eggs with butter, orange mixture, and water. Combine with dry ingredients; stir to blend. Pour into a 1 1/2-quart greased casserole, 9-inch greased loaf pan, or greased muffin tins. Bake at 350 degrees for casserole or loaf for 45-55 minutes; 30 minutes for muffins.
