ANNE'S POTATOES WITH LEMON AND
GARLIC
 
8 medium potatoes
1 1/2 tbsp. olive oil
2 tbsp. butter
Juice of 1/2 a lemon
3 - 4 cloves of garlic (pressed)
Salt and pepper

Peel potatoes, cut into slices. Drop potatoes into boiling salted water and boil for 5 minutes or until barely tender. Drain thoroughly. Put olive oil and butter in pan (preferably non-stick, large pan) and place on burner. Toss and turn frequently until potatoes are brown.

When potatoes are brown, toss with garlic, salt, pepper and lemon juice. You may continue sauteing until potatoes are as brown as you wish. Serve with eggs, pork chops, chicken, steak or fish.
