PINEAPPLE SQUARES 
4 c. flour
1 c. sugar
1 c. shortening
1 tsp. baking soda
2 eggs, beaten
1/2 c. milk

FILLING:

1 lg. can crushed pineapple
1/2 c. sugar, or more to taste
1/2 c. water
Thicken with cornstarch

Dough: Mix together flour, sugar, shortening and baking soda. Add eggs beaten with milk; mix well. Separate into two portions and chill.

Filling: Mix filling ingredients together and cool.

Roll dough between was paper. Put one portion on bottom of 9 x 13 x 2 inch pan. Pour filling on top. Cover with other portion of dough which has been rolled out to for top crust. Spread with small amount of milk and sprinkle top with coconut. Bake at 350 degrees for 20 to 25 minutes or until crust is golden brown.

P.S. You may substitute any other fruit, e.g. blueberry, cherry or strawberry instead of pineapple.
