QUICK RED BEANS AND RICE 
1 lb. Italian sausage
2 stalks celery, chopped
1 lg. onion, chopped
3 cloves garlic, minced
2 (15 oz.) cans New Orleans red beans
1/2 can water
1 tsp. pepper
3 bay leaves
1/2 tsp. cumin
6 dashes Tabasco sauce
1 c. chopped ham
Salt to taste
Hot cooked rice

Fry sausage in saucepan until brown. Add celery, onion, and garlic; mix well. Cook until tender; drain. Add red beans, water, pepper, bay leaves, cumin, Tabasco, and ham.

Cook over low heat for 30 minutes. Remove bay leaves; serve over hot rice. Makes 6-8 servings.
